Spice up your weeknight dinners with Baked Chicken Fajitas, a hassle-free way to enjoy bold Tex-Mex flavors with minimal cleanup.
Ingredients:
- 3 boneless, skinless chicken breasts, sliced
- 1 red bell pepper, sliced
- 1 yellow bell pepper, sliced
- 1 onion, sliced
- 2 tablespoons olive oil
- 1 tablespoon chili powder
- 1 teaspoon cumin
- 1 teaspoon paprika
- 1/2 teaspoon garlic powder
- Salt and pepper, to taste
- Flour tortillas, for serving
- Sour cream and salsa, for serving
Instructions:
- Preheat oven to 400°F. Place sliced chicken, bell peppers, and onion on a large baking sheet.
- Drizzle with olive oil and sprinkle with chili powder, cumin, paprika, garlic powder, salt, and pepper. Toss to coat evenly.
- Bake for 20-25 minutes until the chicken is cooked through and the vegetables are tender.
