Ingredients:

  • 1 lb ground beef
  • 1 onion, diced
  • 2 cloves garlic, minced
  • 1 can (14 oz) diced tomatoes
  • 1 can (14 oz) kidney beans, drained and rinsed
  • 1 can (14 oz) black beans, drained and rinsed
  • 1 can (14 oz) corn, drained
  • 2 tbsp chili powder
  • 1 tsp cumin
  • Salt and black pepper
  • Shredded cheddar cheese (for garnish)
  • Sour cream (for garnish)
  • Chopped fresh cilantro (for garnish)

Instructions:

  1. In a large pot, brown the ground beef over medium heat, breaking it apart with a spoon as it cooks.
  2. Add diced onions and minced garlic to the pot and cook until onions are translucent.
  3. Stir in diced tomatoes, kidney beans, black beans, corn, chili powder, cumin, salt, and black pepper.
  4. Bring the mixture to a boil, then reduce heat and simmer for about 30 minutes, stirring occasionally.
  5. Serve hot, garnished with shredded cheddar cheese, sour cream, and chopped fresh cilantro.
