Ingredients:
- 1 lb ground beef
- 1 onion, diced
- 2 cloves garlic, minced
- 1 can (14 oz) diced tomatoes
- 1 can (14 oz) kidney beans, drained and rinsed
- 1 can (14 oz) black beans, drained and rinsed
- 1 can (14 oz) corn, drained
- 2 tbsp chili powder
- 1 tsp cumin
- Salt and black pepper
- Shredded cheddar cheese (for garnish)
- Sour cream (for garnish)
- Chopped fresh cilantro (for garnish)
Instructions:
- In a large pot, brown the ground beef over medium heat, breaking it apart with a spoon as it cooks.
- Add diced onions and minced garlic to the pot and cook until onions are translucent.
- Stir in diced tomatoes, kidney beans, black beans, corn, chili powder, cumin, salt, and black pepper.
- Bring the mixture to a boil, then reduce heat and simmer for about 30 minutes, stirring occasionally.
- Serve hot, garnished with shredded cheddar cheese, sour cream, and chopped fresh cilantro.
