Ingredients:

  • 1 cup all-purpose flour
  • 2 tbsp granulated sugar
  • 1 tsp baking powder
  • 1/2 tsp baking soda
  • 1/4 tsp salt
  • 1 cup buttermilk
  • 1 egg
  • 2 tbsp unsalted butter, melted
  • 1 cup fresh or frozen blueberries
  • Maple syrup (for serving)

Instructions:

  1. In a mixing bowl, whisk together flour, sugar, baking powder, baking soda, and salt.
  2. In another bowl, whisk together buttermilk, egg, and melted butter.
  3. Pour the wet ingredients into the dry ingredients and stir until just combined (it’s okay if there are some lumps).
  4. Gently fold in blueberries.
  5. Heat a non-stick skillet or griddle over medium-high heat and lightly grease it.
  6. Pour 1/4 cup of batter onto the skillet for each pancake.
  7. Cook until bubbles form on the surface, then flip and cook the other side until golden brown.
  8. Serve hot with maple syrup.
