Ingredients:
- 2 tablespoons olive oil
- 1 large butternut squash, peeled and diced
- 1 onion, diced
- 2 cloves garlic, minced
- 4 cups chicken or vegetable broth
- 1/2 cup coconut milk
- 1 teaspoon ground cinnamon
- 1/4 teaspoon nutmeg
- Salt and pepper, to taste
- Fresh thyme, for garnish
Instructions:
- Heat olive oil in a large pot over medium heat. Add the diced onion and minced garlic, sautéing for 3-4 minutes until softened.
- Add the diced butternut squash and cook for an additional 5 minutes.
- Pour in the chicken or vegetable broth and bring to a boil. Reduce the heat and let the soup simmer for 25-30 minutes until the squash is tender.
