Ingredients:
- 1 tablespoon olive oil
- 1 onion, diced
- 3 cloves garlic, minced
- 1 jalapeño, seeded and chopped
- 1 teaspoon ground cumin
- 1 teaspoon chili powder
- 4 cups chicken broth
- 2 cups cooked chicken, shredded
- 1 can (14.5 oz) diced tomatoes
- 1 can (15 oz) black beans, drained and rinsed
- 1 cup corn kernels
- Juice of 1 lime
- Salt and pepper, to taste
- Tortilla strips, for garnish
- Fresh cilantro, for garnish
Instructions:
- Heat olive oil in a large pot over medium heat. Add the diced onion, minced garlic, and chopped jalapeño, sautéing for 3-4 minutes until softened.
- Stir in the ground cumin and chili powder, cooking for an additional 1-2 minutes.
- Pour in the chicken broth and add the shredded chicken, diced tomatoes, black beans, and corn. Bring to a boil.
- Reduce the heat and let the soup simmer for 15-20 minutes to allow the flavors to meld together.
