Ingredients:

  • 1 tablespoon olive oil
  • 1 onion, diced
  • 3 cloves garlic, minced
  • 1 jalapeño, seeded and chopped
  • 1 teaspoon ground cumin
  • 1 teaspoon chili powder
  • 4 cups chicken broth
  • 2 cups cooked chicken, shredded
  • 1 can (14.5 oz) diced tomatoes
  • 1 can (15 oz) black beans, drained and rinsed
  • 1 cup corn kernels
  • Juice of 1 lime
  • Salt and pepper, to taste
  • Tortilla strips, for garnish
  • Fresh cilantro, for garnish

Instructions:

  1. Heat olive oil in a large pot over medium heat. Add the diced onion, minced garlic, and chopped jalapeño, sautéing for 3-4 minutes until softened.
  2. Stir in the ground cumin and chili powder, cooking for an additional 1-2 minutes.
  3. Pour in the chicken broth and add the shredded chicken, diced tomatoes, black beans, and corn. Bring to a boil.
  4. Reduce the heat and let the soup simmer for 15-20 minutes to allow the flavors to meld together.
  5. Stir in the lime juice and season with salt and pepper to taste.
  6. Serve the soup hot, garnished with tortilla strips and fresh cilantro.
