Ingredients:
1 1/2 cups graham cracker crumbs
1/4 cup granulated sugar
1/2 cup unsalted butter, melted
3 (8-ounce) packages cream cheese, softened
1 cup granulated sugar
3 large eggs
1 teaspoon vanilla extract
1/4 cup sour cream
Instructions:
- Preheat the oven to 325°F (160°C). Grease a 9-inch springform pan.
- In a bowl, combine the graham cracker crumbs, 1/4 cup sugar, and melted butter. Press the mixture into the bottom of the prepared pan.
- In a large mixing bowl, beat the softened cream cheese and 1 cup sugar until smooth.
- Add the eggs, one at a time, beating well after each addition. Stir in the vanilla extract and sour cream.
- Pour the cream cheese mixture over the crust in the pan.
- Bake for 50-55 minutes, or until the center is set.
- Turn off the oven and let the cheesecake cool inside with the door slightly open for 1 hour.
- Refrigerate for at least 4 hours or overnight before serving.
