Ingredients:

  • 2 tbsp butter
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 1 can (28 oz) crushed tomatoes
  • 1 cup chicken or vegetable broth
  • 1/2 cup heavy cream
  • 1/4 cup fresh basil leaves, chopped
  • Salt and black pepper
  • Grated Parmesan cheese (for garnish)

Instructions:

  1. In a large pot, melt butter over medium heat.
  2. Add chopped onion and minced garlic, and sauté until translucent.
  3. Stir in crushed tomatoes and chicken or vegetable broth.
  4. Bring the mixture to a simmer and cook for 15 minutes.
  5. Using an immersion blender or a regular blender, puree the soup until smooth.
  6. Return the soup to the pot and stir in heavy cream and chopped basil.
  7. Season with salt and black pepper to taste.
  8. Simmer for an additional 5 minutes.
  9. Serve hot, garnished with grated Parmesan cheese.
