Delmonico Potatoes

Ingredients

  • 1 Bag Frozen Hashbrowns – cubed or shredded
  • 1 Can Cream of Chicken soup
  • 8oz Container sour cream
  • 2 Cups shredded cheddar cheese
  • ½ Cup shredded swiss cheese
  • 1 Small onion, diced
  • ¾ Cup Butter
  • 2 tablespoons olive oil
  • 4 ounces prosciutto or ham, diced small
  • 3 potatoes (about 1 pound), diced into ½” cubes
  • 12 eggs
  • 2 tablespoons cream or milk
  • 1 teaspoon kosher salt
  • ¼ teaspoon pepper
  • 1 cup (4 ounces) Gruyere cheese
  • 2 green onions, sliced for garnish

Directions

  1. Mix all ingredients in large bowl.
  2. Place in a greased casserole dish or large oven proof bowl.
  3. Top with Panko Bread Crumbs.
  4. Bake 11/2 to 2 hours at 375 degrees, or until brown and bubbling.
