Ingredients:

  • 1 whole chicken (about 4-5 pounds)
  • 2 lemons, quartered
  • Fresh herbs (rosemary, thyme, and sage)
  • 4 cloves garlic, minced
  • Salt and black pepper
  • Olive oil

Instructions:

  1. Preheat the oven to 425°F (220°C).
  2. Rinse and pat dry the chicken.
  3. Season the chicken cavity with salt and pepper and stuff it with lemon quarters and fresh herbs.
  4. Rub the chicken skin with minced garlic and drizzle with olive oil.
  5. Season the outside of the chicken with salt and pepper.
  6. Place the chicken in a roasting pan and roast for about 1 hour and 15 minutes or until the internal temperature reaches 165°F (74°C) and the skin is golden brown.
  7. Let the chicken rest for 10 minutes before carving.
