Ingredients:
- 1 whole chicken (about 4-5 pounds)
- 2 lemons, quartered
- Fresh herbs (rosemary, thyme, and sage)
- 4 cloves garlic, minced
- Salt and black pepper
- Olive oil
Instructions:
- Preheat the oven to 425°F (220°C).
- Rinse and pat dry the chicken.
- Season the chicken cavity with salt and pepper and stuff it with lemon quarters and fresh herbs.
- Rub the chicken skin with minced garlic and drizzle with olive oil.
- Season the outside of the chicken with salt and pepper.
- Place the chicken in a roasting pan and roast for about 1 hour and 15 minutes or until the internal temperature reaches 165°F (74°C) and the skin is golden brown.
- Let the chicken rest for 10 minutes before carving.
