Enjoy a flavorful twist on a classic Mexican dish with Mushroom and Spinach Quesadillas. These quesadillas are filled with sautéed mushrooms, spinach, and gooey melted cheese, all sandwiched between crispy tortillas. They make for a quick and delicious meal that’s perfect for lunch, dinner, or even as a tasty appetizer.
Ingredients:
- 8 medium flour tortillas
- 2 cups sliced mushrooms (such as button or cremini)
- 2 cups fresh spinach leaves
- 1 small onion, finely chopped
- 2 cloves garlic, minced
- 1 tablespoon olive oil
- 1 cup shredded Monterey Jack cheese or Mexican cheese blend
- Salt and pepper, to taste
- Optional toppings: salsa, sour cream, guacamole
Instructions:
- Heat olive oil in a large skillet over medium heat.
- Add chopped onion and minced garlic to the skillet and cook until softened and fragrant, about 2-3 minutes.
- Add sliced mushrooms to the skillet and cook, stirring occasionally, until they are tender and any liquid has evaporated, about 5-7 minutes.
- Stir in fresh spinach leaves and cook until wilted, about 2-3 minutes. Season with salt and pepper to taste. Remove from heat and set aside.
- Heat a separate skillet or griddle over medium heat.
- Place one flour tortilla on the skillet and sprinkle a layer of shredded cheese evenly over the tortilla.
- Spoon a portion of the mushroom and spinach mixture over half of the tortilla.
- Fold the other half of the tortilla over the filling to create a half-moon shape.
- Cook the quesadilla for 2-3 minutes on each side, or until the tortilla is golden brown and crispy, and the cheese is melted.
- Repeat the process with the remaining tortillas and filling ingredients.
- Once all the quesadillas are cooked, remove them from the skillet and let them cool slightly before slicing them into wedges.
- Serve the Mushroom and Spinach Quesadillas hot, with optional toppings such as salsa, sour cream, or guacamole on the side.
