These quesadillas are filled with sautéed mushrooms, spinach, and gooey melted cheese, all sandwiched between crispy tortillas. Ingredients:

  • 8 medium flour tortillas
  • 2 cups sliced mushrooms (such as button or cremini)
  • 2 cups fresh spinach leaves
  • 1 small onion, finely chopped
  • 2 cloves garlic, minced
  • 1 tablespoon olive oil
  • 1 cup shredded Monterey Jack cheese or Mexican cheese blend
  • Salt and pepper, to taste
  • Optional toppings: salsa, sour cream, guacamole

Instructions:

  • Heat olive oil in a large skillet over medium heat.
  • Add chopped onion and minced garlic to the skillet and cook until softened and fragrant, about 2-3 minutes.
  • Add sliced mushrooms to the skillet and cook, stirring occasionally, until they are tender and any liquid has evaporated, about 5-7 minutes.
  • Stir in fresh spinach leaves and cook until wilted, about 2-3 minutes. Season with salt and pepper to taste. Remove from heat and set aside.
  • Heat a separate skillet or griddle over medium heat.
  • Place one flour tortilla on the skillet and sprinkle a layer of shredded cheese evenly over the tortilla.
  • Spoon a portion of the mushroom and spinach mixture over half of the tortilla.
  • Fold the other half of the tortilla over the filling to create a half-moon shape.
  • Cook the quesadilla for 2-3 minutes on each side, or until the tortilla is golden brown and crispy, and the cheese is melted.
  • Repeat the process with the remaining tortillas and filling ingredients.
  • Once all the quesadillas are cooked, remove them from the skillet and let them cool slightly before slicing them into wedges.
  • Serve the Mushroom and Spinach Quesadillas hot, with optional toppings such as salsa, sour cream, or guacamole on the side.
