Instructions:
- In a medium saucepan, heat the chicken or vegetable broth over medium heat. Once heated, reduce the heat to low to keep it warm while you prepare the risotto.

- Begin adding the warm broth to the skillet, one ladleful at a time, stirring frequently and allowing each addition to be absorbed before adding more. Continue this process until the rice is creamy and cooked to your desired consistency, which typically takes about 20-25 minutes.
- Once the risotto is cooked, remove it from the heat and stir in the remaining tablespoon of butter and grated Parmesan cheese until melted and well combined. Season with salt and pepper to taste.
