Ingredients:

  • 1/4 cup (1/2 stick) unsalted butter
  • 3/4 cup packed brown sugar
  • 1 can (20 ounces) pineapple slices in juice, drained
  • Maraschino cherries, drained
  • 1 1/2 cups all-purpose flour
  • 1 1/2 teaspoons baking powder
  • 1/4 teaspoon salt
  • 1/2 cup (1 stick) unsalted butter, softened
  • 3/4 cup granulated sugar
  • 2 large eggs

  • 1/2 cup milk

Instructions:

  • Preheat your oven to 350°F (175°C).
  • In a 9-inch round cake pan, melt 1/4 cup of butter over low heat.
  • Sprinkle the brown sugar evenly over the melted butter in the cake pan.
  • Arrange pineapple slices on top of the brown sugar, placing a maraschino cherry in the center of each pineapple ring and in between the rings, if desired.
  • In a medium bowl, whisk together the flour, baking powder, and salt until well combined.
  • In a separate large bowl, cream together the softened butter and granulated sugar until light and fluffy.
  • Beat in the eggs, one at a time, until well incorporated. Stir in the vanilla extract.

  • Carefully spread the cake batter over the pineapple slices and cherries in the cake pan, smoothing the top with a spatula.
  • Bake in the preheated oven for 40 to 45 minutes, or until a toothpick inserted into the center of the cake comes out clean.
  • Remove the cake from the oven and let it cool in the pan for 5 minutes.
  • Place a serving plate upside down over the cake pan, then carefully invert the cake onto the plate. Let the cake cool slightly before serving.
