Ingredients:

  • 1 cup quinoa, rinsed and cooked
  • 1 can (15 oz) black beans, drained and rinsed
  • 1 cup corn kernels (fresh, frozen, or canned)
  • 1 red bell pepper, diced
  • 1/4 cup fresh cilantro, chopped
  • 2 cloves garlic, minced
  • Juice of 2 limes
  • 2 tbsp extra-virgin olive oil
  • Salt and black pepper

Instructions:

  1. In a large bowl, combine cooked quinoa, black beans, corn, diced red bell pepper, and chopped cilantro.
  2. In a separate bowl, whisk together minced garlic, lime juice, extra-virgin olive oil, salt, and black pepper.
  3. Pour the dressing over the quinoa mixture and toss to combine.
  4. Refrigerate for at least 30 minutes before serving to allow flavors to meld.
