Ingredients:
- 1 cup quinoa, rinsed and cooked
- 1 can (15 oz) black beans, drained and rinsed
- 1 cup corn kernels (fresh, frozen, or canned)
- 1 red bell pepper, diced
- 1/4 cup fresh cilantro, chopped
- 2 cloves garlic, minced
- Juice of 2 limes
- 2 tbsp extra-virgin olive oil
- Salt and black pepper
Instructions:
- In a large bowl, combine cooked quinoa, black beans, corn, diced red bell pepper, and chopped cilantro.
- In a separate bowl, whisk together minced garlic, lime juice, extra-virgin olive oil, salt, and black pepper.
- Pour the dressing over the quinoa mixture and toss to combine.
- Refrigerate for at least 30 minutes before serving to allow flavors to meld.
