Ingredients:
- 4 salmon fillets (about 6 oz each), skin-on or skinless
- 2 tablespoons olive oil
- 2 cloves garlic, minced
- 1 teaspoon lemon zest
- 1 tablespoon lemon juice
- 1 teaspoon dried thyme
- Salt and pepper, to taste
- 1 large sweet potato, peeled and cubed
- 2 cups broccoli florets
- 1 red bell pepper, sliced
- 1 yellow bell pepper, sliced
- 1 small red onion, sliced
- Fresh parsley, for garnish
Instructions:
- Preheat your oven to 400°F (200°C). Line a baking sheet with parchment paper or lightly grease it with olive oil.
- In a small bowl, whisk together olive oil, minced garlic, lemon zest, lemon juice, dried thyme, salt, and pepper to create a marinade for the salmon.
- Place the salmon fillets on the prepared baking sheet, skin-side down if using skin-on fillets. Brush the marinade over the salmon fillets, coating them evenly.
- In a large bowl, toss the cubed sweet potato, broccoli florets, sliced red and yellow bell peppers, and red onion with a drizzle of olive oil, salt, and pepper.
- Spread the seasoned vegetables out on the baking sheet around the salmon fillets.
- Roast in the preheated oven for about 20-25 minutes, or until the salmon is cooked through and flakes easily with a fork, and the vegetables are tender and caramelized, stirring the vegetables halfway through cooking.
- Once cooked, remove the baking sheet from the oven and let it rest for a few minutes.
- Carefully transfer the roasted vegetables and salmon fillets to serving plates.
- Garnish with freshly chopped parsley for a burst of freshness and color.
- Serve hot and enjoy the delicious flavors and textures of Salmon with Roasted Vegetables!
Suggested Pairing:
Pair your Salmon with Roasted Vegetables with a crisp white wine such as Chardonnay or Pinot Grigio for a perfect match to the light and flavorful dish. You can also serve it with a side of quinoa or brown rice for added sustenance. Enjoy!
