Ingredients:
- 4 boneless, skinless chicken breasts
- 2 cups fresh spinach, chopped
- 1/2 cup crumbled feta cheese
- 2 cloves garlic, minced
- 1 tablespoon olive oil
- Salt and pepper, to taste
- Toothpicks, for securing
Instructions:
- Preheat the oven to 375°F (190°C).
- In a skillet, heat the olive oil over medium heat. Add the chopped spinach and minced garlic, cooking for 2-3 minutes until wilted. Remove from heat and stir in the crumbled feta cheese.
- Cut a pocket into each chicken breast and stuff with the spinach and feta mixture. Secure with toothpicks.
- Place the stuffed chicken breasts in a baking dish and season with salt and pepper.
- Bake for 25-30 minutes until the chicken is cooked through and the internal temperature reaches 165°F (74°C).
