Ingredients:
- 6 egg yolks
- 3/4 cup granulated sugar
- 8 oz mascarpone cheese
- 1 1/2 cups heavy cream
- 1 cup brewed espresso or strong coffee, cooled
- 1/4 cup coffee liqueur (optional)
- Ladyfingers
- Unsweetened cocoa powder
- Dark chocolate shavings
Instructions:
- In a heatproof bowl, whisk together egg yolks and granulated sugar.
- Place the bowl over a pot of simmering water (double boiler) and whisk continuously until the mixture thickens and becomes pale.
- Remove from heat and whisk in mascarpone cheese until smooth.
- In a separate bowl, whip the heavy cream until stiff peaks form.
- Gently fold the whipped cream into the mascarpone mixture.
- In a shallow dish, combine brewed espresso and coffee liqueur (if using).
- Quickly dip each ladyfinger into the coffee mixture and arrange a layer at the bottom of a serving dish.
- Spread half of the mascarpone mixture over the ladyfingers.
- Repeat with another layer of dipped ladyfingers and the remaining mascarpone mixture.
- Cover and refrigerate for at least 4 hours or overnight.
- Before serving, dust with unsweetened cocoa powder and garnish with dark chocolate shavings.
