Ingredients:

  • 6 egg yolks
  • 3/4 cup granulated sugar
  • 8 oz mascarpone cheese
  • 1 1/2 cups heavy cream
  • 1 cup brewed espresso or strong coffee, cooled
  • 1/4 cup coffee liqueur (optional)
  • Ladyfingers
  • Unsweetened cocoa powder
  • Dark chocolate shavings

Instructions:

  1. In a heatproof bowl, whisk together egg yolks and granulated sugar.
  2. Place the bowl over a pot of simmering water (double boiler) and whisk continuously until the mixture thickens and becomes pale.
  3. Remove from heat and whisk in mascarpone cheese until smooth.
  4. In a separate bowl, whip the heavy cream until stiff peaks form.
  5. Gently fold the whipped cream into the mascarpone mixture.
  6. In a shallow dish, combine brewed espresso and coffee liqueur (if using).
  7. Quickly dip each ladyfinger into the coffee mixture and arrange a layer at the bottom of a serving dish.
  8. Spread half of the mascarpone mixture over the ladyfingers.
  9. Repeat with another layer of dipped ladyfingers and the remaining mascarpone mixture.
  10. Cover and refrigerate for at least 4 hours or overnight.
  11. Before serving, dust with unsweetened cocoa powder and garnish with dark chocolate shavings.
