Relish the fresh and vibrant flavors of Vegetarian Tacos. This colorful and healthy dish is perfect for a meatless meal. Follow these steps to create your own plate of Vegetarian Tacos.

Ingredients:

  • 1 tablespoon olive oil
  • 1 red bell pepper, sliced
  • 1 yellow bell pepper, sliced
  • 1 zucchini, sliced
  • 1 red onion, sliced
  • 1 teaspoon chili powder
  • 1/2 teaspoon cumin
  • Salt and pepper, to taste
  • 8 small corn tortillas
  • 1/2 cup crumbled feta cheese
  • Fresh cilantro, for garnish
  • Lime wedges, for serving

Instructions:

  • Heat the olive oil in a large skillet over medium-high heat. Add the sliced bell peppers, zucchini, and red onion. Stir-fry for 5-7 minutes until the vegetables are tender.
  • Add the chili powder, cumin, salt, and pepper to the skillet. Stir to coat the vegetables evenly.
  • Warm the corn tortillas in a dry skillet or microwave.
  • Fill each tortilla with the vegetable mixture and top with crumbled feta cheese and fresh cilantro.
