Ingredients:
- 1 tablespoon olive oil
- 1 red bell pepper, sliced
- 1 yellow bell pepper, sliced
- 1 zucchini, sliced
- 1 red onion, sliced
- 1 teaspoon chili powder
- 1/2 teaspoon cumin
- Salt and pepper, to taste
- 8 small corn tortillas
- 1/2 cup crumbled feta cheese
- Fresh cilantro, for garnish
- Lime wedges, for serving
Instructions:
- Heat the olive oil in a large skillet over medium-high heat. Add the sliced bell peppers, zucchini, and red onion. Stir-fry for 5-7 minutes until the vegetables are tender.
- Add the chili powder, cumin, salt, and pepper to the skillet. Stir to coat the vegetables evenly.
- Warm the corn tortillas in a dry skillet or microwave.
