Savor the rich and hearty flavors of Zuppa Toscana. This classic Italian soup is perfect for a comforting meal. Follow these steps to create your own bowl of Zuppa Toscana.
Ingredients:
- 1 tablespoon olive oil
- 1 pound Italian sausage, crumbled
- 1 onion, diced
- 3 cloves garlic, minced
- 4 cups chicken broth
- 2 large potatoes, diced
- 2 cups kale, chopped
- 1 cup heavy cream
- 1/2 teaspoon crushed red pepper flakes
- Salt and pepper, to taste
- Parmesan cheese, for garnish
Instructions:
- Heat olive oil in a large pot over medium heat. Add the crumbled Italian sausage, cooking until browned. Remove and set aside.
- In the same pot, add the diced onion and minced garlic, sautéing for 3-4 minutes until softened.
- Pour in the chicken broth and add the diced potatoes. Bring to a boil, then reduce the heat and let it simmer for 15-20 minutes until the potatoes are tender.
- Stir in the cooked sausage, chopped kale, and heavy cream. Simmer for an additional 5 minutes.
- Season with crushed red pepper flakes, salt, and pepper to taste.
- Serve the soup hot, garnished with Parmesan cheese.
