Savor the rich and hearty flavors of Zuppa Toscana. This classic Italian soup is perfect for a comforting meal. Follow these steps to create your own bowl of Zuppa Toscana.

Ingredients:

  • 1 tablespoon olive oil
  • 1 pound Italian sausage, crumbled
  • 1 onion, diced
  • 3 cloves garlic, minced
  • 4 cups chicken broth
  • 2 large potatoes, diced
  • 2 cups kale, chopped
  • 1 cup heavy cream
  • 1/2 teaspoon crushed red pepper flakes
  • Salt and pepper, to taste
  • Parmesan cheese, for garnish

Instructions:

  1. Heat olive oil in a large pot over medium heat. Add the crumbled Italian sausage, cooking until browned. Remove and set aside.
  2. In the same pot, add the diced onion and minced garlic, sautéing for 3-4 minutes until softened.
  3. Pour in the chicken broth and add the diced potatoes. Bring to a boil, then reduce the heat and let it simmer for 15-20 minutes until the potatoes are tender.
  4. Stir in the cooked sausage, chopped kale, and heavy cream. Simmer for an additional 5 minutes.
  5. Season with crushed red pepper flakes, salt, and pepper to taste.
  6. Serve the soup hot, garnished with Parmesan cheese.
