Celebrate the seasonal bounty of asparagus with this elegant and flaky Asparagus and Goat Cheese Tart. It’s the perfect dish for a light lunch or brunch.
Ingredients:
- 1 sheet of puff pastry, thawed
- 1/2 cup goat cheese, softened
- 1/4 cup grated Parmesan cheese
- 1 bunch asparagus, trimmed
- 1 tbsp olive oil
- Salt and pepper to taste
Instructions:
- Preheat oven to 400°F. Roll out puff pastry on a baking sheet lined with parchment paper.
- Spread goat cheese over the pastry, leaving a 1-inch border. Sprinkle Parmesan on top.
- Arrange asparagus spears over the cheese. Drizzle with olive oil and season with salt and pepper.
- Fold the edges of the pastry over to create a border. Bake for 20-25 minutes, or until the pastry is golden brown.
