Celebrate the seasonal bounty of asparagus with this elegant and flaky Asparagus and Goat Cheese Tart. It’s the perfect dish for a light lunch or brunch.

Ingredients:

  • 1 sheet of puff pastry, thawed
  • 1/2 cup goat cheese, softened
  • 1/4 cup grated Parmesan cheese
  • 1 bunch asparagus, trimmed
  • 1 tbsp olive oil
  • Salt and pepper to taste

Instructions:

  1. Preheat oven to 400°F. Roll out puff pastry on a baking sheet lined with parchment paper.
  2. Spread goat cheese over the pastry, leaving a 1-inch border. Sprinkle Parmesan on top.
  3. Arrange asparagus spears over the cheese. Drizzle with olive oil and season with salt and pepper.
  4. Fold the edges of the pastry over to create a border. Bake for 20-25 minutes, or until the pastry is golden brown.
