A show-stopping dish, Beef Wellington is perfect for special occasions.
Ingredients:
- 1 lb beef tenderloin
- 2 tablespoons olive oil
- 1/2 lb mushrooms, finely chopped
- 1 sheet puff pastry
- 2 tablespoons Dijon mustard
- 1 egg, beaten
Instructions:
- Sear tenderloin in olive oil until browned on all sides. Let cool.
- Sauté mushrooms until dry. Spread mustard on tenderloin, then top with mushrooms.
- Wrap in puff pastry and brush with egg. Bake at 400°F for 40 minutes.


Suggested Pairing:
Serve with roasted root vegetables and a red wine reduction.
