Bibim Guksu is a light, spicy, and tangy noodle dish made with thin wheat noodles and a vibrant gochujang-based sauce. It’s bright, bold, and just right for a quick June dinner.

Ingredients:

  • 2 servings somyeon (thin wheat noodles)
  • 1/2 cucumber, julienned
  • 1/2 carrot, julienned
  • 1 boiled egg, halved
  • 1 tbsp gochujang
  • 1 tbsp soy sauce
  • 1 tbsp rice vinegar
  • 1 tsp sugar
  • 1 tsp sesame oil
  • 1 tsp sesame seeds
  • Optional: kimchi or shredded lettuce

Instructions:

  1. Cook noodles, rinse in cold water, and drain.
  2. In a bowl, mix gochujang, soy sauce, vinegar, sugar, and sesame oil.
  3. Toss noodles in sauce.
  4. Top with vegetables, egg, and sesame seeds.
