Bibim Guksu is a light, spicy, and tangy noodle dish made with thin wheat noodles and a vibrant gochujang-based sauce. It’s bright, bold, and just right for a quick June dinner.
Ingredients:
- 2 servings somyeon (thin wheat noodles)
- 1/2 cucumber, julienned
- 1/2 carrot, julienned
- 1 boiled egg, halved
- 1 tbsp gochujang
- 1 tbsp soy sauce
- 1 tbsp rice vinegar
- 1 tsp sugar
- 1 tsp sesame oil
- 1 tsp sesame seeds
- Optional: kimchi or shredded lettuce
Instructions:
- Cook noodles, rinse in cold water, and drain.
- In a bowl, mix gochujang, soy sauce, vinegar, sugar, and sesame oil.
- Toss noodles in sauce.
- Top with vegetables, egg, and sesame seeds.


Suggested Pairing:
Serve with a side of kimchi or grilled tofu. Enjoy with cold barley tea or cucumber-infused water.
