Fluffy and bursting with juicy blueberries, these Blueberry Oatmeal Pancakes are a delightful breakfast treat. Made with wholesome oats and a touch of sweetness, they’re perfect for fueling your morning.

Ingredients:

  • 1 cup rolled oats
  • 1 cup milk (dairy or plant-based)
  • 1 large egg
  • 1 tablespoon honey or maple syrup
  • 1 teaspoon vanilla extract
  • 1 teaspoon baking powder
  • ½ cup fresh or frozen blueberries
  • Butter or oil for cooking

Instructions:

  1. Blend the oats in a food processor until they become a fine flour.
  2. In a bowl, combine oat flour, milk, egg, honey, vanilla extract, and baking powder to form a batter.
  3. Gently fold in the blueberries.
  4. Heat a non-stick skillet over medium heat, add a little butter or oil, and pour ¼ cup batter for each pancake.
