Fluffy and bursting with juicy blueberries, these Blueberry Oatmeal Pancakes are a delightful breakfast treat. Made with wholesome oats and a touch of sweetness, they’re perfect for fueling your morning.
Ingredients:
- 1 cup rolled oats
 - 1 cup milk (dairy or plant-based)
 - 1 large egg
 - 1 tablespoon honey or maple syrup
 - 1 teaspoon vanilla extract
 - 1 teaspoon baking powder
 - ½ cup fresh or frozen blueberries
 - Butter or oil for cooking
 
Instructions:
- Blend the oats in a food processor until they become a fine flour.
 - In a bowl, combine oat flour, milk, egg, honey, vanilla extract, and baking powder to form a batter.
 - Gently fold in the blueberries.
 - Heat a non-stick skillet over medium heat, add a little butter or oil, and pour ¼ cup batter for each pancake.
 - Cook for 2-3 minutes on each side or until golden brown.
