This chilled noodle dish is perfect for summer, with a rich peanut sauce that coats the noodles, offering a comforting yet light meal. The crunchy vegetables add texture and freshness.
Ingredients:
- 8 oz Chinese egg noodles or any thin wheat noodles
- 2 tbsp peanut butter
- 1 tbsp soy sauce
- 1 tbsp rice vinegar
- 1 tsp sugar
- 1 tsp sesame oil
- 1 tbsp water (to thin the sauce)
- 1 cup shredded carrots
- 1 cucumber, julienned
- 2 green onions, sliced
- 1 tbsp roasted peanuts, chopped
Instructions:
- Cook the noodles according to package instructions, then rinse under cold water to cool.
- In a bowl, whisk together peanut butter, soy sauce, rice vinegar, sugar, sesame oil, and water until smooth to make the peanut sauce.
- Toss the cooled noodles in the peanut sauce until fully coated.
- Top the noodles with shredded carrots, cucumber, green onions, and chopped roasted peanuts.
- Serve immediately or chill for 20 minutes in the fridge before serving.
