This chilled noodle dish is perfect for summer, with a rich peanut sauce that coats the noodles, offering a comforting yet light meal. The crunchy vegetables add texture and freshness.

Ingredients:

  • 8 oz Chinese egg noodles or any thin wheat noodles
  • 2 tbsp peanut butter
  • 1 tbsp soy sauce
  • 1 tbsp rice vinegar
  • 1 tsp sugar
  • 1 tsp sesame oil
  • 1 tbsp water (to thin the sauce)
  • 1 cup shredded carrots
  • 1 cucumber, julienned
  • 2 green onions, sliced
  • 1 tbsp roasted peanuts, chopped

Instructions:

  1. Cook the noodles according to package instructions, then rinse under cold water to cool.
  2. In a bowl, whisk together peanut butter, soy sauce, rice vinegar, sugar, sesame oil, and water until smooth to make the peanut sauce.
  3. Toss the cooled noodles in the peanut sauce until fully coated.
  4. Top the noodles with shredded carrots, cucumber, green onions, and chopped roasted peanuts.
  5. Serve immediately or chill for 20 minutes in the fridge before serving.
