This Caprese Pasta Salad is a refreshing and light lunch option. With tender pasta, fresh mozzarella, juicy tomatoes, and fragrant basil tossed in a balsamic vinaigrette, it’s a delightful mix of flavors.
Ingredients:
- 2 cups cooked pasta (penne or rotini)
- 1 cup cherry tomatoes, halved
- 1 cup fresh mozzarella balls (bocconcini)
- 1/4 cup fresh basil leaves, torn
- 3 tbsp. balsamic vinaigrette
- Salt and pepper to taste
Instructions:
- In a large bowl, combine cooked pasta, cherry tomatoes, mozzarella, and basil.
- Drizzle with balsamic vinaigrette and toss gently to coat.
