Enjoy all the flavors of carrot cake in a healthy and easy Carrot Cake Overnight Oats recipe! This no-cook breakfast is packed with fiber, protein, and warm spices, perfect for busy mornings.
Ingredients:
- 1 cup rolled oats
- 1 cup milk (dairy or plant-based)
- ½ cup grated carrots
- ½ teaspoon cinnamon
- ¼ teaspoon nutmeg
- 1 tablespoon maple syrup or honey
- 1 teaspoon chia seeds
- ¼ teaspoon vanilla extract
- 2 tablespoons chopped walnuts
- 2 tablespoons raisins
Instructions:
- In a jar or bowl, mix oats, milk, grated carrots, cinnamon, nutmeg, maple syrup, chia seeds, and vanilla extract.
- Stir well and cover. Refrigerate overnight.
