Enjoy all the flavors of carrot cake in a healthy and easy Carrot Cake Overnight Oats recipe! This no-cook breakfast is packed with fiber, protein, and warm spices, perfect for busy mornings.

Ingredients:

  • 1 cup rolled oats
  • 1 cup milk (dairy or plant-based)
  • ½ cup grated carrots
  • ½ teaspoon cinnamon
  • ¼ teaspoon nutmeg
  • 1 tablespoon maple syrup or honey
  • 1 teaspoon chia seeds
  • ¼ teaspoon vanilla extract
  • 2 tablespoons chopped walnuts
  • 2 tablespoons raisins

Instructions:

  1. In a jar or bowl, mix oats, milk, grated carrots, cinnamon, nutmeg, maple syrup, chia seeds, and vanilla extract.
