Make mornings easier with this Cheesy Veggie Breakfast Casserole. Packed with eggs, cheese, and mixed vegetables, this casserole is perfect for feeding a crowd or meal prepping for the week.

Ingredients:

  • 8 large eggs
  • 1/4 cup milk
  • 1 cup diced zucchini
  • 1/2 cup diced red bell pepper
  • 1/2 cup diced onion
  • 1/2 cup shredded cheddar cheese
  • 1 tsp garlic powder
  • 1/2 tsp salt
  • 1/4 tsp pepper
  • Olive oil for sautéing

Instructions:

  1. Preheat your oven to 375°F and grease a 9×9 baking dish.
  2. Heat olive oil in a skillet over medium heat. Sauté zucchini, bell pepper, and onion until softened, about 5 minutes.
  3. In a bowl, whisk together eggs, milk, garlic powder, salt, and pepper. Stir in the sautéed vegetables and half of the cheese.
  4. Pour the mixture into the baking dish and sprinkle the remaining cheese on top.
  5. Bake for 30-35 minutes or until the eggs are set and the top is golden.
