Make mornings easier with this Cheesy Veggie Breakfast Casserole. Packed with eggs, cheese, and mixed vegetables, this casserole is perfect for feeding a crowd or meal prepping for the week.
Ingredients:
- 8 large eggs
- 1/4 cup milk
- 1 cup diced zucchini
- 1/2 cup diced red bell pepper
- 1/2 cup diced onion
- 1/2 cup shredded cheddar cheese
- 1 tsp garlic powder
- 1/2 tsp salt
- 1/4 tsp pepper
- Olive oil for sautéing
Instructions:
- Preheat your oven to 375°F and grease a 9×9 baking dish.
- Heat olive oil in a skillet over medium heat. Sauté zucchini, bell pepper, and onion until softened, about 5 minutes.
- In a bowl, whisk together eggs, milk, garlic powder, salt, and pepper. Stir in the sautéed vegetables and half of the cheese.
- Pour the mixture into the baking dish and sprinkle the remaining cheese on top.
- Bake for 30-35 minutes or until the eggs are set and the top is golden.
