A fluffy bowl of couscous gets a sweet breakfast twist with cherries, slivered almonds, and a splash of almond milk. Light, nutty, and ready in minutes.
Ingredients:
- 1/2 cup dry couscous
- 1/2 cup hot water or almond milk
- 1/2 tsp vanilla extract
- 1/2 cup fresh or thawed frozen cherries, pitted and chopped
- 2 tbsp sliced almonds
- 1 tbsp maple syrup or honey
- Pinch of cinnamon
Instructions:
- In a bowl, mix couscous, vanilla, and hot liquid. Cover and let sit 5 minutes.
- Fluff with a fork and stir in cherries, almonds, syrup, and cinnamon.
- Serve warm or chilled.

Perfect with a cold almond milk latte or iced matcha.
