A fluffy bowl of couscous gets a sweet breakfast twist with cherries, slivered almonds, and a splash of almond milk. Light, nutty, and ready in minutes.

Ingredients:

  • 1/2 cup dry couscous
  • 1/2 cup hot water or almond milk
  • 1/2 tsp vanilla extract
  • 1/2 cup fresh or thawed frozen cherries, pitted and chopped
  • 2 tbsp sliced almonds
  • 1 tbsp maple syrup or honey
  • Pinch of cinnamon

Instructions:

  1. In a bowl, mix couscous, vanilla, and hot liquid. Cover and let sit 5 minutes.
  2. Fluff with a fork and stir in cherries, almonds, syrup, and cinnamon.
  3. Serve warm or chilled.
