Transport yourself to southern France with Chicken Provencal, a rustic dish of chicken thighs stewed in a tomato-based sauce with garlic, olives, and fragrant herbs.
Ingredients:
- 4 bone-in, skin-on chicken thighs
- 1 tbsp olive oil
- 4 garlic cloves, minced
- 1 can diced tomatoes (14 oz)
- 1/2 cup Kalamata olives, pitted
- 1/2 tsp dried thyme
- 1/2 tsp dried rosemary
- Salt and pepper, to taste
- Fresh basil for garnish
Instructions:
- Preheat oven to 375°F.
- Season chicken with salt and pepper.
- In an oven-safe skillet, heat olive oil and brown chicken on both sides. Remove and set aside.
- Sauté garlic, then add tomatoes, olives, thyme, and rosemary. Simmer for 5 minutes.
- Return chicken to the skillet and spoon sauce over top.
- Transfer to oven and bake for 30–35 minutes, until chicken is cooked through.


Suggested Pairing:
Pair with herbed couscous or crusty bread and a glass of chilled rosé or dry white wine like Sauvignon Blanc.
