Transport yourself to southern France with Chicken Provencal, a rustic dish of chicken thighs stewed in a tomato-based sauce with garlic, olives, and fragrant herbs.

Ingredients:

  • 4 bone-in, skin-on chicken thighs
  • 1 tbsp olive oil
  • 4 garlic cloves, minced
  • 1 can diced tomatoes (14 oz)
  • 1/2 cup Kalamata olives, pitted
  • 1/2 tsp dried thyme
  • 1/2 tsp dried rosemary
  • Salt and pepper, to taste
  • Fresh basil for garnish

Instructions:

  1. Preheat oven to 375°F.
  2. Season chicken with salt and pepper.
  3. In an oven-safe skillet, heat olive oil and brown chicken on both sides. Remove and set aside.
  4. Sauté garlic, then add tomatoes, olives, thyme, and rosemary. Simmer for 5 minutes.
  5. Return chicken to the skillet and spoon sauce over top.
  6. Transfer to oven and bake for 30–35 minutes, until chicken is cooked through.
