Experience a burst of spring in a small, elegant serving. This chilled pea and mint soup is blended with fresh peas, aromatic mint, and a touch of lemon for brightness, then served in shot glasses as a refreshing starter.
Ingredients:
- 2 cups fresh or frozen peas
- 1 small shallot, chopped
- 1 clove garlic, minced
- 1 cup vegetable broth
- 1/4 cup fresh mint leaves
- Juice of 1/2 lemon
- 1/4 cup heavy cream (optional)
- Salt and pepper, to taste
- Drizzle of olive oil
Instructions:
- In a small saucepan, heat a drizzle of olive oil over medium heat and gently sauté the shallot and garlic until soft (about 2 minutes).
- Add the peas and vegetable broth, then simmer for 3–4 minutes until the peas are tender.
- Remove from heat and blend the mixture with mint leaves and lemon juice until smooth.
- Stir in heavy cream if using, and season with salt and pepper.
- Chill briefly or serve immediately in small shot glasses.
