Experience a burst of spring in a small, elegant serving. This chilled pea and mint soup is blended with fresh peas, aromatic mint, and a touch of lemon for brightness, then served in shot glasses as a refreshing starter.

Ingredients:

  • 2 cups fresh or frozen peas
  • 1 small shallot, chopped
  • 1 clove garlic, minced
  • 1 cup vegetable broth
  • 1/4 cup fresh mint leaves
  • Juice of 1/2 lemon
  • 1/4 cup heavy cream (optional)
  • Salt and pepper, to taste
  • Drizzle of olive oil

Instructions:

  1. In a small saucepan, heat a drizzle of olive oil over medium heat and gently sauté the shallot and garlic until soft (about 2 minutes).
  2. Add the peas and vegetable broth, then simmer for 3–4 minutes until the peas are tender.
  3. Remove from heat and blend the mixture with mint leaves and lemon juice until smooth.
  4. Stir in heavy cream if using, and season with salt and pepper.
  5. Chill briefly or serve immediately in small shot glasses.
