Chilled Sesame Noodles are a refreshing, savory dish perfect for hot summer days. The noodles are tossed in a creamy, tangy sesame sauce and topped with crisp vegetables, making for a light yet satisfying meal.
Ingredients:
- 8 oz Chinese wheat noodles or spaghetti
- 2 tbsp tahini (or sesame paste)
- 1 tbsp soy sauce
- 1 tbsp rice vinegar
- 1 tbsp sesame oil
- 1 tsp sugar
- 1 clove garlic, minced
- ½ cucumber, julienned
- 2 green onions, sliced
- 1 tbsp toasted sesame seeds
Instructions:
- Cook the noodles according to the package directions, then drain and rinse them under cold water to cool.
- In a bowl, whisk together tahini, soy sauce, rice vinegar, sesame oil, sugar, and garlic until smooth to make the sauce.
- Toss the noodles in the sesame sauce, then top with julienned cucumber, sliced green onions, and toasted sesame seeds.
- Serve immediately or chill in the fridge for 20 minutes before serving for extra freshness.
