Chilled Sesame Noodles are a refreshing, savory dish perfect for hot summer days. The noodles are tossed in a creamy, tangy sesame sauce and topped with crisp vegetables, making for a light yet satisfying meal.

Ingredients:

  • 8 oz Chinese wheat noodles or spaghetti
  • 2 tbsp tahini (or sesame paste)
  • 1 tbsp soy sauce
  • 1 tbsp rice vinegar
  • 1 tbsp sesame oil
  • 1 tsp sugar
  • 1 clove garlic, minced
  • ½ cucumber, julienned
  • 2 green onions, sliced
  • 1 tbsp toasted sesame seeds

Instructions:

  1. Cook the noodles according to the package directions, then drain and rinse them under cold water to cool.
  2. In a bowl, whisk together tahini, soy sauce, rice vinegar, sesame oil, sugar, and garlic until smooth to make the sauce.
  3. Toss the noodles in the sesame sauce, then top with julienned cucumber, sliced green onions, and toasted sesame seeds.
  4. Serve immediately or chill in the fridge for 20 minutes before serving for extra freshness.
