A refreshing twist on dinner, this Japanese-inspired cold noodle dish is light, nutty, and full of crunch. Ideal for warmer spring evenings.

Ingredients:

  • 6 oz soba noodles
  • 1 cup snap peas, blanched
  • 1/2 cup shredded carrots
  • 2 green onions, sliced
  • 1 tbsp sesame seeds

Sesame Dressing:

  • 2 tbsp soy sauce
  • 1 tbsp rice vinegar
  • 1 tbsp sesame oil
  • 1 tsp honey
  • 1 tsp grated ginger

Instructions:

  1. Cook soba noodles, then rinse under cold water.
  2. In a bowl, whisk dressing ingredients.
  3. Toss noodles with veggies, dressing, and sesame seeds.
  4. Serve chilled or at room temperature.
