A refreshing twist on dinner, this Japanese-inspired cold noodle dish is light, nutty, and full of crunch. Ideal for warmer spring evenings.
Ingredients:
- 6 oz soba noodles
- 1 cup snap peas, blanched
- 1/2 cup shredded carrots
- 2 green onions, sliced
- 1 tbsp sesame seeds
Sesame Dressing:
- 2 tbsp soy sauce
- 1 tbsp rice vinegar
- 1 tbsp sesame oil
- 1 tsp honey
- 1 tsp grated ginger
Instructions:
- Cook soba noodles, then rinse under cold water.
- In a bowl, whisk dressing ingredients.
- Toss noodles with veggies, dressing, and sesame seeds.
- Serve chilled or at room temperature.
