This bright and tangy chicken dish is coated in a zesty lemon sauce. Crispy chicken pieces are tossed in a sweet and sour lemon glaze, making it a light yet satisfying dinner choice.
Ingredients:
- 1 lb chicken breast, cut into bite-sized pieces
- 1 egg, beaten
- ½ cup cornstarch
- 1 tbsp vegetable oil
- 1 cup chicken broth
- 1/3 cup lemon juice
- 2 tbsp sugar
- 1 tbsp soy sauce
- 1 tsp cornstarch (for sauce)
- Lemon slices for garnish
Instructions:
- Coat the chicken pieces in beaten egg and cornstarch.
- Heat vegetable oil in a large pan over medium-high heat. Fry the chicken pieces in batches until golden brown and crispy. Remove and set aside.
- In a small saucepan, combine chicken broth, lemon juice, sugar, and soy sauce. Bring to a boil.
- Mix 1 tsp cornstarch with 1 tbsp water and add to the sauce to thicken it. Cook for another 2 minutes.
- Pour the sauce over the fried chicken and toss until evenly coated.
- Garnish with lemon slices and serve.
