A comforting yet light Creamy Leek and Potato Soup, perfect for early spring evenings. The silky texture and mild oniony flavor of leeks pair beautifully with tender potatoes and a hint of cream.
Ingredients:
- 2 large leeks, trimmed and sliced
- 3 medium potatoes, peeled and diced
- 4 cups vegetable or chicken broth
- 1 small onion, chopped
- 2 cloves garlic, minced
- ½ cup heavy cream (optional)
- 2 tbsp butter
- Salt and pepper to taste
- Chopped fresh chives for garnish
Instructions:
- Melt butter in a large pot over medium heat. Add onions, garlic, and leeks, cooking until soft.
- Add potatoes and broth, bringing to a simmer. Cook until potatoes are tender (about 15 minutes).
- Use an immersion blender to blend until smooth, then stir in cream if using. Season with salt and pepper.
- Garnish with fresh chives before serving.
