A comforting yet light Creamy Leek and Potato Soup, perfect for early spring evenings. The silky texture and mild oniony flavor of leeks pair beautifully with tender potatoes and a hint of cream.

Ingredients:

  • 2 large leeks, trimmed and sliced
  • 3 medium potatoes, peeled and diced
  • 4 cups vegetable or chicken broth
  • 1 small onion, chopped
  • 2 cloves garlic, minced
  • ½ cup heavy cream (optional)
  • 2 tbsp butter
  • Salt and pepper to taste
  • Chopped fresh chives for garnish

Instructions:

  1. Melt butter in a large pot over medium heat. Add onions, garlic, and leeks, cooking until soft.
  2. Add potatoes and broth, bringing to a simmer. Cook until potatoes are tender (about 15 minutes).
  3. Use an immersion blender to blend until smooth, then stir in cream if using. Season with salt and pepper.
  4. Garnish with fresh chives before serving.
