Indulge in a rich and creamy Spinach and Mushroom Risotto. This dish features Arborio rice cooked to perfection with sautéed mushrooms, fresh spinach, and a hint of Parmesan cheese.
Ingredients:
- 1 cup Arborio rice
- 4 cups chicken or vegetable broth
- 1 cup sliced mushrooms
- 2 cups fresh spinach
- 1 small onion, finely chopped
- 2 tbsp olive oil
- 1/4 cup dry white wine (optional)
- 1/2 cup grated Parmesan cheese
- Salt and pepper, to taste
Instructions:
- Heat broth in a small pot and keep warm over low heat.
- In a large skillet, heat olive oil over medium heat. Sauté onion and mushrooms until softened, about 5 minutes.
- Add Arborio rice and stir for 1-2 minutes until lightly toasted. Pour in white wine, if using, and stir until absorbed.
- Gradually add warm broth, one ladle at a time, stirring constantly. Allow liquid to absorb before adding more. Continue for 20-25 minutes until rice is creamy and cooked through.
- Stir in spinach and Parmesan cheese. Season with salt and pepper.
- Serve warm.
