Indulge in the rich and savory flavors of Creamy Tuscan Chicken, an easy skillet meal packed with sun-dried tomatoes and spinach.
Ingredients:
- 4 boneless, skinless chicken thighs
- 2 tablespoons olive oil
- 3 cloves garlic, minced
- 1 cup heavy cream
- 1/2 cup chicken broth
- 1/4 cup sun-dried tomatoes, chopped
- 1 cup fresh spinach
- 1/2 teaspoon dried oregano
- Salt and pepper, to taste
- Parmesan cheese, for garnish
Instructions:
- Heat olive oil in a large skillet over medium heat. Season the chicken thighs with salt and pepper, and cook for 6-7 minutes per side, until golden and cooked through. Remove from the skillet and set aside.
- In the same skillet, add minced garlic and sauté for 1-2 minutes until fragrant.
- Pour in the chicken broth and heavy cream, stirring well to combine. Add sun-dried tomatoes and oregano, then bring to a simmer.
- Stir in spinach and let it wilt, then return the chicken to the skillet. Simmer for another 5-7 minutes until the sauce thickens.
- Serve hot, garnished with Parmesan cheese.
