Indulge in the rich and savory flavors of Creamy Tuscan Chicken, an easy skillet meal packed with sun-dried tomatoes and spinach.

Ingredients:

  • 4 boneless, skinless chicken thighs
  • 2 tablespoons olive oil
  • 3 cloves garlic, minced
  • 1 cup heavy cream
  • 1/2 cup chicken broth
  • 1/4 cup sun-dried tomatoes, chopped
  • 1 cup fresh spinach
  • 1/2 teaspoon dried oregano
  • Salt and pepper, to taste
  • Parmesan cheese, for garnish

Instructions:

  1. Heat olive oil in a large skillet over medium heat. Season the chicken thighs with salt and pepper, and cook for 6-7 minutes per side, until golden and cooked through. Remove from the skillet and set aside.
  2. In the same skillet, add minced garlic and sauté for 1-2 minutes until fragrant.
  3. Pour in the chicken broth and heavy cream, stirring well to combine. Add sun-dried tomatoes and oregano, then bring to a simmer.
  4. Stir in spinach and let it wilt, then return the chicken to the skillet. Simmer for another 5-7 minutes until the sauce thickens.
  5. Serve hot, garnished with Parmesan cheese.
