Doenjang Jjigae is a hearty Korean stew made with doenjang (fermented soybean paste), tofu, and vegetables. It’s savory, earthy, and deeply comforting—perfect on chilly evenings.
Ingredients:
- 3 cups water
- 2 tbsp doenjang (fermented soybean paste)
- 1/2 zucchini, sliced
- 1/2 onion, sliced
- 1 small potato, cubed
- 1 green chili, sliced
- 1/2 cup tofu, cubed
- 1 clove garlic, minced
- 1 green onion, chopped
Instructions:
- In a pot, dissolve doenjang in boiling water.
- Add potato, zucchini, onion, and garlic. Simmer for 10 minutes.
- Add tofu and green chili. Cook for another 5–7 minutes.
- Top with green onions before serving.

Enjoy with a bowl of rice, kimchi, and a side of sautéed spinach. Sip on hot roasted barley tea for the full experience.
