Ingredients:
- Eggplant
- Flour

- Breadcrumbs
- Marinara sauce
- Mozzarella cheese

Instructions:
- Preheat the oven to 375°F (190°C).
- Slice the eggplant into rounds, about 1/4 inch thick.
- Prepare three shallow dishes: one with flour, one with beaten eggs, and one with breadcrumbs.
- Dip each eggplant slice first in the flour, then in the beaten eggs, and finally coat evenly with breadcrumbs.
- Heat oil in a frying pan over medium heat. Fry the breaded eggplant slices until golden brown on both sides, then transfer to a paper towel-lined plate to drain excess oil.
- In a baking dish, spread a layer of marinara sauce on the bottom.
- Arrange a layer of fried eggplant slices on top of the sauce.
- Sprinkle with shredded mozzarella and grated Parmesan cheese.
- Repeat the layers until all the eggplant slices are used, ending with a layer of cheese on top.
- Bake in the preheated oven for about 20-25 minutes, or until the cheese is melted and bubbly.
- Remove from the oven and let it cool for a few minutes.
- Garnish with fresh basil leaves before serving.
