A vibrant Niçoise Salad is a summer staple from the south of France. Combining tuna, green beans, potatoes, and olives, it’s a wholesome, protein-rich dish that’s perfect for warm evenings.

Ingredients:

  • 8 oz baby potatoes, halved
  • 2 cups green beans, trimmed
  • 2 hard-boiled eggs, halved
  • 1 can tuna in olive oil, drained
  • 1 cup cherry tomatoes, halved
  • 1/2 cup black olives
  • 1/4 red onion, thinly sliced
  • 2 tbsp olive oil
  • 1 tbsp red wine vinegar
  • 1 tsp Dijon mustard
  • Salt and pepper

Instructions:

  1. Boil potatoes until tender; drain. Blanch green beans for 2 minutes and cool.
  2. Arrange all ingredients on a platter.
  3. Whisk olive oil, vinegar, mustard, salt, and pepper to make a dressing.
  4. Drizzle dressing over salad and serve immediately.
