A vibrant Niçoise Salad is a summer staple from the south of France. Combining tuna, green beans, potatoes, and olives, it’s a wholesome, protein-rich dish that’s perfect for warm evenings.
Ingredients:
- 8 oz baby potatoes, halved
 - 2 cups green beans, trimmed
 - 2 hard-boiled eggs, halved
 - 1 can tuna in olive oil, drained
 - 1 cup cherry tomatoes, halved
 - 1/2 cup black olives
 - 1/4 red onion, thinly sliced
 - 2 tbsp olive oil
 - 1 tbsp red wine vinegar
 - 1 tsp Dijon mustard
 - Salt and pepper
 
Instructions:
- Boil potatoes until tender; drain. Blanch green beans for 2 minutes and cool.
 - Arrange all ingredients on a platter.
 - Whisk olive oil, vinegar, mustard, salt, and pepper to make a dressing.
 - Drizzle dressing over salad and serve immediately.

Serve with crusty French bread and a glass of chilled Chardonnay or sparkling lemonade.
