Quick, flavorful, and perfect for March evenings, this Garlic Butter Shrimp and Asparagus Skillet is a one-pan meal packed with fresh, zesty flavors.
Ingredients:
- 1 lb shrimp, peeled and deveined
- 1 bunch asparagus, trimmed and cut into 2-inch pieces
- 3 tbsp butter
- 3 garlic cloves, minced
- 1/2 tsp red chili flakes (optional)
- Juice of 1 lemon
- Salt and pepper to taste
- Fresh parsley, chopped (for garnish)
Instructions:
- Heat 1 tbsp of butter in a large skillet over medium heat. Add asparagus and sauté for 3-4 minutes until tender-crisp. Remove and set aside.
- In the same skillet, melt the remaining butter. Add garlic and red chili flakes, cooking until fragrant.
- Add shrimp, season with salt and pepper, and cook for 2-3 minutes per side until pink and opaque.
- Return asparagus to the skillet, squeeze lemon juice over the dish, and toss to combine.
- Garnish with fresh parsley and serve warm.
