These golden Greek zucchini fritters are a summer favorite. Made with fresh zucchini, herbs, and feta, they’re crispy on the outside and soft on the inside—perfect for a light dinner or mezze platter.

Ingredients:

  • 2 medium zucchinis, grated and drained
  • 1/2 cup crumbled feta cheese
  • 1/4 cup grated onion
  • 1 egg
  • 1/2 cup flour
  • 2 tbsp chopped fresh mint or dill
  • Salt and pepper
  • Olive oil for frying

Instructions:

  1. Combine grated zucchini, feta, onion, egg, flour, herbs, salt, and pepper in a bowl.
  2. Heat oil in a skillet over medium heat.
  3. Spoon batter into skillet and flatten slightly. Cook until golden on both sides.
  4. Drain on paper towels before serving.
