These golden Greek zucchini fritters are a summer favorite. Made with fresh zucchini, herbs, and feta, they’re crispy on the outside and soft on the inside—perfect for a light dinner or mezze platter.
Ingredients:
- 2 medium zucchinis, grated and drained
- 1/2 cup crumbled feta cheese
- 1/4 cup grated onion
- 1 egg
- 1/2 cup flour
- 2 tbsp chopped fresh mint or dill
- Salt and pepper
- Olive oil for frying
Instructions:
- Combine grated zucchini, feta, onion, egg, flour, herbs, salt, and pepper in a bowl.
- Heat oil in a skillet over medium heat.
- Spoon batter into skillet and flatten slightly. Cook until golden on both sides.
- Drain on paper towels before serving.


Suggested Pairing:
Pair with tzatziki sauce and a light cucumber-tomato salad. Enjoy with a chilled glass of white wine like Assyrtiko or iced lemon water.
