Celebrate the bounty of the sea with Haemul Pajeon. This crispy Korean pancake is packed with scallions and seafood like squid and shrimp—perfect for sharing on a breezy June evening.
Ingredients:
- 1/2 cup all-purpose flour
- 1/2 cup cold water
- 1 egg
- 1/2 cup chopped squid or shrimp
- 4–5 scallions, cut into long strips
- 1/4 small onion, sliced
- Vegetable oil for frying
Dipping Sauce:
- 2 tbsp soy sauce
- 1 tsp vinegar
- 1 tsp sesame oil
- Pinch of gochugaru
Instructions:
- In a bowl, mix flour, water, and egg until smooth.
- Add seafood, onion, and mix gently.
- Heat oil in a skillet. Pour batter and top with scallions. Cook until golden brown on both sides.
- Slice into pieces and serve with dipping sauce.
