Enjoy a light and flavorful dinner with Herb-Crusted Salmon, perfect for March’s transitional weather. This dish features flaky salmon coated in fresh herbs and served with a bright lemon butter sauce.

Ingredients:

  • 4 salmon fillets
  • 1/4 cup fresh parsley, chopped
  • 2 tbsp fresh dill, chopped
  • 1 tbsp olive oil
  • Salt and pepper to taste
  • 1/4 cup butter
  • Juice of 1 lemon

Instructions:

  1. Preheat oven to 425°F. Line a baking sheet with parchment paper.
  2. Brush salmon fillets with olive oil, then coat with parsley and dill. Season with salt and pepper.
  3. Bake for 12-15 minutes, or until the salmon flakes easily with a fork.
  4. In a small saucepan, melt butter and stir in lemon juice. Drizzle over salmon before serving.
