Savor a balanced and flavorful dinner with Honey Glazed Salmon and Roasted Vegetables. This recipe combines sweet and tangy glazed salmon with a medley of perfectly roasted seasonal vegetables.

Ingredients:

  • 4 salmon fillets
  • 3 tbsp honey
  • 2 tbsp soy sauce
  • 1 tsp Dijon mustard
  • 1 tsp garlic powder
  • 1 lb mixed vegetables (broccoli, carrots, bell peppers, etc.)
  • 2 tbsp olive oil
  • Salt and pepper, to taste

Instructions:

  1. Preheat the oven to 400°F (200°C). Line a baking sheet with parchment paper.
  2. In a small bowl, whisk together honey, soy sauce, Dijon mustard, and garlic powder.
  3. Place the salmon fillets on one side of the baking sheet and brush generously with the glaze.
  4. Toss the vegetables with olive oil, salt, and pepper, and spread them on the other side of the sheet.
  5. Bake for 15-20 minutes, or until the salmon is cooked through and the vegetables are tender.
