Savor a balanced and flavorful dinner with Honey Glazed Salmon and Roasted Vegetables. This recipe combines sweet and tangy glazed salmon with a medley of perfectly roasted seasonal vegetables.
Ingredients:
- 4 salmon fillets
- 3 tbsp honey
- 2 tbsp soy sauce
- 1 tsp Dijon mustard
- 1 tsp garlic powder
- 1 lb mixed vegetables (broccoli, carrots, bell peppers, etc.)
- 2 tbsp olive oil
- Salt and pepper, to taste
Instructions:
- Preheat the oven to 400°F (200°C). Line a baking sheet with parchment paper.
- In a small bowl, whisk together honey, soy sauce, Dijon mustard, and garlic powder.
- Place the salmon fillets on one side of the baking sheet and brush generously with the glaze.
- Toss the vegetables with olive oil, salt, and pepper, and spread them on the other side of the sheet.
- Bake for 15-20 minutes, or until the salmon is cooked through and the vegetables are tender.
