Japchae is a colorful and satisfying dish made with sweet potato noodles, sautéed vegetables, and beef. It’s slightly sweet, savory, and chewy—a celebration of texture and flavor.
Ingredients:
- 6 oz Korean sweet potato noodles (dangmyeon)
- 4 oz beef, thinly sliced
- 1/2 onion, sliced
- 1 small carrot, julienned
- 1/2 bell pepper, sliced
- 1/2 cup spinach
- 2 cloves garlic, minced
- 2 tbsp soy sauce
- 1 tbsp sugar
- 1 tbsp sesame oil
- 1 tsp sesame seeds
- Vegetable oil for cooking
Instructions:
- Cook noodles according to the package, rinse in cold water, and drain.
- Stir-fry vegetables and beef separately with a little oil.
- In a large bowl, mix noodles with soy sauce, sugar, garlic, and sesame oil.
- Add all cooked ingredients and toss well.
- Garnish with sesame seeds.

Serve with a side of pickled radish or cucumber salad and enjoy with cold barley tea or sparkling water with lemon.
