This Lemon Thyme Olive Oil Cake is moist, citrusy, and subtly herbal—perfect for spring gatherings. The olive oil adds richness while the thyme balances the tart lemon for a fragrant, grown-up dessert.
Ingredients:
- 1 1/2 cups all-purpose flour
- 1/2 tsp baking powder
- 1/2 tsp baking soda
- 1/4 tsp salt
- 3/4 cup sugar
- 2 large eggs
- 1/2 cup olive oil
- 1/2 cup plain yogurt
- Juice and zest of 1 lemon
- 1 tbsp chopped fresh thyme
Instructions:
- Preheat oven to 350°F. Grease a loaf or round cake pan.
- In a bowl, mix flour, baking powder, baking soda, and salt.
- In another bowl, whisk eggs and sugar until light. Add olive oil, yogurt, lemon juice/zest, and thyme.
- Fold in dry ingredients until just combined.
- Bake for 40–45 minutes or until a toothpick comes out clean.
