This Lemon Thyme Olive Oil Cake is moist, citrusy, and subtly herbal—perfect for spring gatherings. The olive oil adds richness while the thyme balances the tart lemon for a fragrant, grown-up dessert.

Ingredients:

  • 1 1/2 cups all-purpose flour
  • 1/2 tsp baking powder
  • 1/2 tsp baking soda
  • 1/4 tsp salt
  • 3/4 cup sugar
  • 2 large eggs
  • 1/2 cup olive oil
  • 1/2 cup plain yogurt
  • Juice and zest of 1 lemon
  • 1 tbsp chopped fresh thyme

Instructions:

  1. Preheat oven to 350°F. Grease a loaf or round cake pan.
  2. In a bowl, mix flour, baking powder, baking soda, and salt.
  3. In another bowl, whisk eggs and sugar until light. Add olive oil, yogurt, lemon juice/zest, and thyme.
  4. Fold in dry ingredients until just combined.
  5. Bake for 40–45 minutes or until a toothpick comes out clean.
