This Loaded Baked Potato Salad combines the flavors of a classic baked potato with creamy dressing, bacon, cheese, and green onions.
Ingredients:
- 3 lbs potatoes, peeled and cubed
- 1 cup sour cream
- 1/2 cup mayonnaise
- 1 cup shredded cheddar cheese
- 1/2 cup cooked bacon, crumbled
- 1/4 cup green onions, sliced
- Salt and pepper to taste
Instructions:
- Boil potatoes until tender, about 10–15 minutes. Drain and cool.
- In a bowl, combine sour cream, mayonnaise, cheese, bacon, and green onions.
- Add cooled potatoes and toss gently.
- Chill for at least 1 hour before serving.
