A quick and nutritious lunch, this Mediterranean Chickpea Bowl is loaded with fresh veggies, protein-rich chickpeas, and tangy feta cheese, all drizzled with a lemon-tahini dressing.

Ingredients:

  • 1 can chickpeas, rinsed and drained
  • 1 cup cucumber, diced
  • 1 cup cherry tomatoes, halved
  • 1/4 cup red onion, sliced
  • 1/4 cup feta cheese, crumbled
  • 2 tbsp lemon-tahini dressing

Instructions:
