Beat the summer heat with Mul Naengmyeon—a refreshing Korean noodle dish served in an icy, tangy broth. With chewy buckwheat noodles, crisp cucumber, and slices of pear and beef, this dish is the ultimate slurp-worthy cool-down.

Ingredients:

  • 1 bundle naengmyeon noodles (buckwheat noodles)
  • 2 cups cold beef broth (or dongchimi broth)
  • 1 tbsp vinegar
  • 1 tsp sugar
  • 1/2 Korean pear, thinly sliced
  • 1/4 cucumber, julienned
  • 1 boiled egg, halved
  • 2 slices cold boiled beef (optional)
  • Mustard paste or gochujang (optional)
  • Ice cubes

Instructions:

  1. Cook noodles according to package instructions. Rinse under cold water and drain.
    Mix broth, vinegar, and sugar. Chill thoroughly or add ice cubes.
  2. In a large bowl, pour cold broth over noodles.
  3. Top with pear, cucumber, egg, and beef.
  4. Add a dab of mustard paste or gochujang if desired.
