Rustic and beautiful, this Peach and Chamomile Galette combines juicy spring peaches with floral chamomile in a flaky crust. No pie pan required—just freeform perfection.

Ingredients:

  • 1 prepared pie crust (homemade or store-bought)
  • 3 ripe peaches, sliced
  • 1 tbsp dried chamomile flowers (or 2 chamomile tea bags)
  • 1/4 cup sugar
  • 1 tbsp flour
  • 1 egg (for egg wash)
  • 1 tbsp honey (for drizzle)
     

Instructions:

  1. Preheat oven to 375°F.
  2. In a bowl, toss peach slices with sugar, flour, and chamomile. Let sit 10 minutes.
  3. Roll crust onto parchment paper. Pile fruit in the center, leaving a 2-inch border. Fold edges over.
  4. Brush crust with egg wash. Bake for 35 minutes or until golden.
  5. Drizzle with honey and let cool slightly before serving.
